Ingredients

  • 750g pumpkin
  • br />1 large onion
  • br />2 cups arborio rice
  • br />4 cup vegie stock
  • br />1/2 cup grated parmessan
  • br />
  • br />and add some pureed spinich
  • oven 200 degree, dice and roast rumpkin for about 20 min
  • reduce oven temp to 180
  • i tble of oil in heatproof casserole dish over med heat add diced onion, for 3 min/ till soft.
  • add rice until coated with oil. pour stock over, stir bring to boil. cover and place in oven. cook for 20 mins Add the spinich in the last few mins
  • 5.add parmesan and roast pumpkin to rissotto. toss gentally and serve
