Ingredients

  • 1 (2 to 3 pds) broiler/ fryer chicken ( or one whole chicken)
  • 1/2 cup butter
  • 1/3 cup lemon juice
  • 1 Table spoon paprika
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon brown sugar
  • 1/2 teaspoon crushed dried rosemary
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon cayenne pepper

Preparation

  1. Place chicken in an ungreased 13-in. x 9-in.x 2-in. baking pan. Combine remaining ingredients in a small saucepan; bring to a boil. Remove from the heat and pour over chicken. Bake, uncovered, at 325 degrees F for 1-1/2 hours or until juices run clear, basting occasionally.
  2. Or if you are using a whole chicken:
  3. Wash chicken and clean, pat dry
  4. Place whole garlic cloves and onion in the cavity (add anything else you want for your taste)
  5. Baste chicken with sauce
  6. Place on broiling pan and bake at 350 for 1 1/2 hours or until cooked through, basting occasionally.
  7. I add cut up potatoes and carrots to botom of pan half way through with both typs of recipies! So Yummy!
