- 3 eggs
- 4 egg whites
- 2 tbsp of low-fat milk
- 2 pieces of low-fat turkey bacon, minced
- 2 tbsps of minced green onion
- 1/4 cup of salsa
- 1/2 cup of frozen (pre-diced) Mediterranean mixed veggies
- dash of salt and pepper to taste
- Mix all ingredients together and fry on a well-oiled pan as you would scrambled eggs. Serve with a slice of whole wheat toast.
