• This is one of my favorite, easy snacks made of 3 simple ingredients. They taste like a mix between an oatmeal cookie and a granola bar. They're satisfying for breakfast, a quick snack or dessert. I also eat them right out of the freezer as they stay soft and chewy. Pack them in a lunch cooler as a summer picnic treat or snack for a day at the pool or beach!

Ingredients

  • 1 cup pitted dates
  • 1 cup oats
  • 2 Tbsp water

Preparation

  1. Mix all ingredients in blender or food processor. The ingredients all clump together in a nice semi-moist way.
  2. Press the mixture into a small loaf pan.
  3. Cut up the bars and keep them on the counter, refrigerate or freeze them. You can also roll them into balls and roll them in other fun ingredients like coconut!
