For the crust, add 1 tbsp of honey to 1 cup wrist temp water and mix well. Sprinkle in 1 package of yeast and a pinch of salt. When yeast begins to foam, gradually add in enough flour to make a medium soft dough (about 3 cups). Knead for five minutes.
Place in a bowl and pour a couple tablespoons of olive oil over the dough. Roll the ball of dough in the oil and grease the bowl with the leftover oil.
Cover the bowl with plastic wrap and then set in a warm place until doubled in bulk. Punch down and shape into a crust.
For the pizza, preheat oven to 400 degrees. Mix softened cream cheese with milk, lemon juice and rind, garlic, and pepper. Put in microwave for about 45 seconds and blend.
Spread over pizza crust. Top with smoked salmon pieces and capers. Cover with just enough freshly grated parmesan cheese to brown in the oven.
Put in oven till crust is done and cheese is lightly browned (about 20 min.).
