Smoked Salmon Pizza

- Pizza crust (recipe to follow)
- half package cream cheese, softened
- 2-3 tbsp milk
- zest and juice of half a lemon
- 2 cloves garlic finely minced
- freshly gound pepper
- 4 oz smoked salmon
- 2 tbsp capers
- Freshly grated parmesan cheese

Preparation
- For the crust, add 1 tbsp of honey to 1 cup wrist temp water and mix well. Sprinkle in 1 package of yeast and a pinch of salt. When yeast begins to foam, gradually add in enough flour to make a medium soft dough (about 3 cups). Knead for five minutes.
- Place in a bowl and pour a couple tablespoons of olive oil over the dough. Roll the ball of dough in the oil and grease the bowl with the leftover oil.
- Cover the bowl with plastic wrap and then set in a warm place until doubled in bulk. Punch down and shape into a crust.
- For the pizza, preheat oven to 400 degrees. Mix softened cream cheese with milk, lemon juice and rind, garlic, and pepper. Put in microwave for about 45 seconds and blend.
- Spread over pizza crust. Top with smoked salmon pieces and capers. Cover with just enough freshly grated parmesan cheese to brown in the oven.
- Put in oven till crust is done and cheese is lightly browned (about 20 min.).
