  • 1 cup fresh (cooked) corn kernels or 11 oz. sweet canned corn (use whole can if you'd like)
  • 2 1/4 ounce can of sliced black olives, drained
  • 1 Tablespoon cilantro, minced
  • 2 Tablespoons red bell pepper, chopped
  • 4 Tablespoons green onions, chopped
  • 8 ounces cream cheese, softened
  • 2 Tablespoons sour cream
  • 1 Tablespoon mayonnaise
  • 1 Tablespoon lime juice
  • 2 teaspoons jalapenos, minced, or 1 Tablespoon mild chili peppers, diced
  • 2 teaspoons pinto bean or taco seasoning

  • Gently mash 1/2 c. cooked corn kernels with fork. Keep other kernels whole. In a bowl, mix softened cream cheese and sour cream until smooth. Add mayonnaise and lime juice and blend well. Add corn and remaining ingredients and mix. Chill and serve with tortilla chips (Scoops are best).
