Combine the chili powder, pepper and salt and pour on a flat plate or pie pan, then roll the chicken breasts in mixture covering completely (if you make more chicken you may need more of the mixture to coat all of it).
Pour EVOO in large skillet over medium heat, when the pan is hot, add chicken and brown on both sides, about 5 minutes each side (depending on thickness).
Rinse and drain black beans
Pour salsa OR diced tomatoes, black beans, and veggies over chicken.
Reduce heat and simmer for 10- 15 minutes.
Serve hot with a big green salad for a healthy, yummy, and quick meal!!
