  • By making the marinara in the crockpot overnight, you can have a yummy dish of homemade manicotti in a little more than an hour. The extra prep time is worth it when you take a bit of this yummy, filling, comforting dish!

Ingredients

  • Sauce:
  • 4-16 oz cans diced tomatoes
  • 1 can tomato paste
  • I large onion, chopped
  • 1/2 large green bell pepper
  • 3 large garlic cloves, minced
  • 1 cup roasted red peppers
  • 1 T balsamic vinegar
  • 1 T EVOO
  • 1 T brown sugar
  • 1 T Italian seasoning
  • salt and pepper to taste
  • Filling:
  • 1 pint ricotta cheese
  • 2 cups shredded mozarella cheese, divided
  • 1 cup shredded parmesan cheese, divided
  • 2 eggs
  • 5 oz frozen spinach leaves, thawed and blotted with paper towels to remove moisture
  • 1T Italian seasoning
  • salt and pepper

Preparation

  1. Add Sauce ingredients to your crock pot.
  2. Cook on low all day or all night--at least 8 hours.
  3. Before serving, puree with an immersion blender (or carefully add to a regular blender in small batches).
  4. Add salt to taste, if necessary.
  5. Makes about 7 cups of sauce.
  6. Use what you need for this recipe, freeze the rest for another time.
  7. Mix filling ingredients together until blended.
  8. Use 1/2 the Mozarella and 1/2 the Parmesan for the filling. Save the rest to top the dish before baking.
  9. Preheat oven to 400 degrees.
  10. Cook pasta almost to package directions, leaving slightly al dente
  11. Using a 9x13 baking dish, pour about 1 cup of sauce in the bottom of the dish.
  12. Place filling ingredients into a Ziplock back, cut a hole in one corner to use as a pastry bag.
  13. Fill the pasta tubes with the filling.
  14. There will be enough for about 12 tubes of pasta.
  15. Lay the filled pasta in a single layer in casserole.
  16. Pour more sauce (roughly 2 cups) over the filled pasta, sprinkle the remainder cheeses over top and bake for 45 minutes.

easier yet, use fresh spinach and put in large shells. My kids absolutely love it this way!
