• Spinach is one of my favorite vegetables. I use it in salads, scrambles, soups, sandwiches and a few more dishes that I can't remember at this moment (probably because they don't begin with "s"). But I never really thought about using it in a drink (spinach to sip!) until I saw all the green smoothie recipes on Pinterest. I decided to create my own, and here it is. Enjoy!

Ingredients

  • 1/2 cup vanilla yogurt
  • 1 cup orange juice
  • 1 banana
  • 1 cup frozen pineapples
  • 1 cup frozen peaches
  • 1 cup baby spinach

Preparation

  • Blend everything together. This amount pours almost perfectly into five IKEA-sized cups, one for each member in our family. I started with 10 spinach leaves and worked my way up to 1 cup, and if it weren't for the light green color and deeper green flecks, you wouldn't know there was any spinach in the smoothie at all.
