Steak, Bacon And Mushroom Pies

Ingredients
- 1 lb steak, cut into small cubes
- 1 tbsp olive oil
- 8 strips of Canadian bacon, rinds and fat removed, chopped
- 1 onion, chopped
- 2 cloves garlic, crushed
- 1 package mushrooms, sliced
- 2 tsp dried mixed herbs
- 1 can of diced tomatoes
- 1 cup beef stock
- 1 tbsp plain flour mixed with
- 2 tbsp cold water
- 1 packet puff pastry
- 1 tbsp melted butter, for brushing
- Poppy seeds to garnish pies

Preparation
- Heat oil in a large saucepan over low-medium heat.
- Add onion and garlic and cook until soft.
- Add steak and bacon and cook until meat starts to brown.
- Add mushrooms, dried herbs, tomatoes and stock and bring to a gentle boil.
- Reduce heat and simmer, uncovered, for an hour or until the liquid in the saucepan reduces.
- Place lid on saucepan and simmer for a further hour, or until meat is tender.
- Preheat oven to 350ºF.
- You can use ramekins for large individual pies, a muffin pan for small individual pies or one large pan for a family pie.
- Grease and then line your pie tin with puff pastry.
- Trim the excess pastry, leaving 1cm around the tin to join the pie lid to.
- Add flour and water mix to the pie filling a bit at a time, stirring until desired consistency is reached.
- Pour pie filling into the ramekins/muffin pan.
- Cut the pastry to make lids for the pies and join the lid to the excess pastry around the pies by pinching it together.
- Brush pie tops with melted butter and sprinkle on poppy seeds. Stab gently with a knife to make a couple of vent holes.
- Place into the oven for 20-25 minutes or until pastry turns puffy and brown.
- Serve with chips or cheesy mashed potato and vegetables.
