Ingredients

  • 1/2 pound lean beef, sliced in 1-inch strips
  • 2 tablespoons orange marmalade
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable or corn oil
  • 1 teaspoon minced garlic
  • 1 medium onion, chopped
  • 1/2 teaspoon minced fresh ginger
  • 1 tablespoon sherry
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper powder
  • 1/2 pound green beans, washed, edges trimmed, cut in 2-inch pieces
  • 1 cup beef broth
  • 1/3 cup canned Asian soy black beans, pre-soaked for 30 minutes before cooking (Asian market)

Preparation

  1. In a small bowl, combine the marinade of orange marmalade and soy sauce.
  2. Coat the beef strips with the marinade.
  3. Cover the beef in plastic wrap and refrigerate for 15 minutes.
  4. Over medium high heat, in a large wok, heat the oil.
  5. Coat the beef with cornstarch and set aside.
  6. To the hot wok, add the garlic, onions, ginger.
  7. Add the beef, blend well and cook for about 8 minutes.
  8. Add the broth to the wok and let it simmer for 3 to 5 minutes.
  9. Add the sherry and cook for 1 to 2 minutes.
  10. Add the green beans and cook till soft for about 5 to 7 minutes.
  11. Season with salt and pepper.
  12. Drain liquid from the black beans and add to the beef and green beans in the skillet.
  13. Serve dish hot with boiled jasmine white rice.
