• Ingredients:
  • 3 cups sliced strawberries
  • 1 cup mashed strawberries
  • 2 packages of Sugar Cookie dough (softened)
  • 2 8oz packages of cream cheese (softened)
  • 1 TBS Vanilla
  • 3 TBS Sugar or ( 2 pkgs of Splenda)
  • 1/2 cup sugar or ( 1/4 cup splenda)
  • 3 TBS Corn Starch
  • 1/2 cup water
  • Mash cookie dough on a cookie sheet with edges bake at 350 until it starts to brown.
  • Let Cookie cool to room temperature (about 30-45 minutes) Continue with rest of recipe while Cookie cools.
  • Filling
  • Mix softened cream cheese, vanilla, and sugar in mixer on high until it looks whipped (refrigerate)
  • Glaze
  • In a sauce pan on stove without heat mix sugar, corn starch.
  • Stir in water
  • Turn stove on to high and stir in mashed strawberries
  • Stir continuously until it starts to boil,
  • Stir for and additional 1 minute or until it begins to thicken. set pan in a bowl of ice water to cool quickly.
  • Take cream cheese mixture out and spread it on top of the cookie
  • take cooled glaze and poor it over top and spread evenly
  • spread sliced strawberries over top evenly
  • Refrigerate for 1- 2 hours until cool.
  • Cut and enjoy
