Cheese, this one is up to you, we prefer the mexican blend and we top it with Parmesan for the perfect crunch on top...
Chop bacon into small pieces and fry in 10" skillet over medium heat until crispy. Remove bacon and turn down the heat on grease to LOW.
Finely chop garlic, red onion, put in bacon grease to SLOWLY simmer. ( do not let your garlic turn brown)
Finely chop the rest of the ingredients (ham, spinach, and mushroom stems) and add to garlic and onions, mushroom stems first for about 1 minute while you turn the heat up to medium.
After adding all ingredients,(don't forget the bacon bits!) saute for approx. 4 minutes.
Remove from heat and using a small spoon, stuff the middle of the mushrooms on the cookie sheet. Bake for 10-13 minutes, then add cheese and broil on low until the cheese is bubbling and golden and forms a perfect crust(about 4 minutes)
Serve hot. Warning, they are addicting and you could burn your taste buds!
Some recipes I've seen for this call for breadcrumbs, but we don't like them, so this is my modified version. Enjoy!
