- 1/2 c. milk
- 2 eggs
- 1/2 c. vegetable oil
- 1/2 c. honey
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 tbsp. baking powder
- 1/2 c. corn meal
- 1 1/2 c. flour
- Mix flour, cornmeal, baking powder and salt. Set aside.
- Mix honey, oil, eggs, and milk.
- Mix liquids into dry ingredients. Fill muffin tins 2/3 full.
- Bake at 350 degrees for 15 to 25 minutes.
