Ingredients

  • Sweet Potato Quesadillas:
  • 15 oz refried beans
  • 1 large sweet potato, cooked and mashed (about 1 1/2 C)
  • 1/3 C picante salsa
  • 1 Tbsp cumin powder
  • Salt and pepper to taste
  • 8 flour tortillas (home-made is best!)
  • 1 tbsp oil of choice for frying (per batch)
  • Eda-mole:
  • 2 avocados, mashed
  • 1/2 C cooked edamame, mashed
  • 1-2 limes juiced
  • 1/2 Tbsp cumin powder
  • Salt and pepper to taste

Preparation

  1. For the eda-mole, combine avocados, edamame, lime juice, cumin powder, salt, and pepper.
  2. If you want it blended well, not chunky, use a small food processor or blender to mix well.
  3. Adjust tastes if necessary.
  4. For the sweet potato filling, combine refried beans, sweet potatoes, salsa, cumin powder, salt, and pepper in a medium bowl, and mix by hand.
  5. Divide mixture between 8 tortillas, spreading on one half of the tortilla and then folding over.
  6. Heat oil in non-stick frying pan or cast iron skillet.
  7. Fry folded tortillas in pairs of two, cooking 3-5 minutes on each side until browned.
  8. Depending on your cookware, you may have to oil the pan after each batch (to make sure they don't stick).
  9. Remove, and cut in half or into triangles.
  10. Serve topped with eda-mole. Enjoy!
