But open it up and you will soon discover a unique combination of savory, crunchy, delicate and sweet and cannot be duplicated.
  • This wrap can be enjoyed as a lunch or a snack. Parents will love how healthy this dish is and how easy it is to make. The longest part of preparation is allowing the chicken to sit in a potent marinade where all of the magic happens. Cooking time is only 2 minutes! Children will love the fact that this finger food is the perfect combination of crunchy and sweet.

Ingredients

  • 1.5 pounds chicken tenderloins
  • 1 cup mango chutney
  • 1 tsp all-purpose or poultry seasoning
  • ¼ - ½ tsp sea salt
  • 1 tsp curry powder
  • 1 tbsp lime juice squeezed
  • 1 tsp chopped garlic
  • ½ tbsp cayenne pepper
  • 2 scallions chopped
  • 1 head Boston bibb lettuce
  • 4 carrots shredded
  • 1 ripe whole mango sliced
  • *Serve with additional mango chutney for dipping

Preparation

  1. • In large bowl or large sandwich bag, combine chicken with salt, seasonings, curry powder, garlic, lime juice, cayenne pepper, and mango chutney
  2. • Let marinate for 1 hour
  3. • Preheat table top (double sided) grill on medium heat
  4. • Grill chicken for about 2 minutes or until brown
  5. • Place equal parts of carrots on individual lettuce leaves
  6. • Top with chicken and 2 slices of mango per wrap
  7. • Serve alongside additional mango chutney for dipping
  8. *Cook’s note: If you do not own a grill, place chicken in 400˚F preheated oven for 10-15 minutes. Turn halfway during cooking.
