Ingredients

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 cup frozen or canned corn
  • 1 package taco seasoning
  • 1 can tomato soup
  • 1/3 cup of water
  • 2 cups crushed nacho chips
  • 2 cups shredded cheese, any kind
  • sour cream

Preparation

  1. Brown beef in large skillet.
  2. Stir in rice, corn, tomato soup, water, and seasoning.
  3. Bring to boil, then reduce heat and simmer for 10 minutes.
  4. Transfer to 2 liter casserole dish, top with chips and cheese.
  5. Place in over at 350 degrees for 20-25 minutes (until cheese is bubbling).
  6. Serve with sour cream and salsa.
