Ingredients

  • 1 pkg 1 oz dried ranch salad dressing mix
  • 8 oz sour cream
  • 1 cup mayonnaise
  • 9" pan Mexican cornbread, baked
  • 2 cans 16 oz pinto beans, drained
  • 3 large tomatoes, chopped
  • 1/2 c chopped bell peppers
  • 1/2 c chopped green onions
  • 8 oz shredded Mexican blend cheese
  • 10 slices bacon, reserve 2 slices for top
  • 2 cans 17 oz whole kernel corn, drained

Preparation

  1. Bake cornbread and fry bacon. Mix and refrigerate ranch dressing powder, sour cream, & mayonnaise. Crumble half the cornbread in bottom of the bow & top with 1 can beans & half of the tomatoes, peppers, onions, & cheese. Add 4 slices crumnbled bacon and 1 can corn. Press down mixture in bowl & top with 1/2 the dressing mixture. Repeat layers ending with dressing on top & 2 pieces of crumbled bacon.
  2. NOTES: Looks pretty layered in glass bowl. Good dish to take to reunions and homecomings---you don't have to worry about keeping it in the refrigerator or keeping it hot.
  3. I used 12 oz bacon, added red onion, & used Fiesta corn. I doubled the dressing.
