Tomato & Potato Soup
- Ingredients
- 6 - ripe tomatoes
- 1 - baking potato (skinned)
- 3 tbsp - honey
- 4 oz - cream cheese (cubed)
- 1 - onion
- 2 tbsp - tarragon or rosemary
- salt & pepper to taste
- Directions
- Chop tomtatoes, potato and onion. Put tomatoes in big pot and simmer. While tomatoes are simmering, sautee potatoes and onion in separate pan - season with herbs, salt and pepper. Sautee until softened, then add to tomatoes and add honey. Turn off heat and add cream cheese.
- Optional: Add 1/2 cup chopped spinach or shredded zucchini for added nutrients and color.
