  • 6 - ripe tomatoes
  • 1 - baking potato (skinned)
  • 3 tbsp - honey
  • 4 oz - cream cheese (cubed)
  • 1 - onion
  • 2 tbsp - tarragon or rosemary
  • salt & pepper to taste

  • Chop tomtatoes, potato and onion. Put tomatoes in big pot and simmer. While tomatoes are simmering, sautee potatoes and onion in separate pan - season with herbs, salt and pepper. Sautee until softened, then add to tomatoes and add honey. Turn off heat and add cream cheese.
  • Optional: Add 1/2 cup chopped spinach or shredded zucchini for added nutrients and color.

Preparation

  1. Chop tomtatoes, potato and onion.
