Chop tomtatoes, potato and onion. Put tomatoes in big pot and simmer. While tomatoes are simmering, sautee potatoes and onion in separate pan - season with herbs, salt and pepper. Sautee until softened, then add to tomatoes and add honey. Turn off heat and add cream cheese.
Optional: Add 1/2 cup chopped spinach or shredded zucchini for added nutrients and color.
