Ingredients

  • 1 tbsp olive oil
  • 1# ground turkey
  • 12-16 oz frozen chopped spinach (whatever fits loosely in a 2 cup glass pyrex measuring cup)
  • 1 can creamed corn
  • 1 can cream of chicken or mushroom soup
  • milk, 2-3 cans (use the empty cream of soup can)
  • 1 cup noodles (any variety, wide egg, rigatoni, bowties, macaroni...)
  • 8-12 oz white hard cheese, any combo/variety (havarti, white american, monterey, provolone, parmesan, mozarella...)

Preparation

  1. rosemary (1-2 tsp)
  2. thyme (1/2 - 1 tsp)
  3. minced garlic 1-2 tsp
  4. mrs. dash garlic and herb, salt and pepper to taste
  5. large pot
  6. Cook the turkey in the olive oil and all the spices in quantities you desire over medium heat, stirring to break it up. Meanwhile, put frozen spinach in microwaveable container with 2 tbsp water and heat in microwave for five minutes. When browned, add creamed corn, can of soup and 2-3 cans of milk, stir together and allow to heat through. Add spinach and noodles, cook until noodles are done. Add cheese(s), allow to melt for a couple minutes, gently stir and pour into bowls and enjoy! Overall takes about 30 minutes and only uses one pan and the container to heat the spinach (I use 2 cup pyrex) You can add more milk to stretch out more servings, along with adding a little more noodles/spinach. Also works without creamed corn, or frozen corn can be substituted. Very flexible recipe, make it your own, I chance it each time with whatever I happen to have in the pantry.
