• On these hot summer days, there is nothing like a frozen treat to cool you off. The fresh summer flavors of watermelon, lime and mint are truly refreshing.

Ingredients

  • 1/4 of a (seedless) watermelon
  • fistful of fresh mint chopped & 2 tbsp. chopped mint (separated)
  • 1 1/4 cup sugar
  • 1 1/4 cup water

Preparation

  1. Combine sugar with water along with fistful of mint and bring to a boil until sugar is totally dissolved
  2. Pour into a sieve to remove mint
  3. Allow the liquid (syrup) to cool
  4. Add chopped and peeled watermelon to blender and mix along with juice of one lime
  5. Combine juice of watermelon, lime with syrup and stir in 2 tablespoons of chopped mint
  6. Separate mixture equally into two gallon freezer bags
  7. Place on flat surface in freezer and stir every hour making sure to break up any big chunks or ice crystals
  8. Continue this process of stirring and re-freezing 5-8 times or until desired crystals are achieved and then freeze overnight
  9. Once ready to serve, scrape desired ice from bag with fork and garnish with fresh mint
