Over the past week I have overhauled the food on my family’s plates. As part of that change, I omitted all processed breakfast foods like cereals and frozen waffles and pancakes. I think it really hit home when the first ingredient in my kids’ Apple Jacks was sugar! Packing ingredients are listed in order of weight, and that wasn’t the only sugar included in the list, different names, all the same. Plus a host of things I can’t pronounce or cook with myself. I had to go according to my new Food Rules.
Whole Wheat Crepes
2 cups whole wheat flour
1 teaspoon premium baking soda (Bob’s Red Mill)
3 large brown eggs (farm fresh if you can get them)
2/3 cup organic whole milk
2 Tablespoons organic coconut oil (also use to brush pan)
