• Over the past week I have overhauled the food on my family’s plates. As part of that change, I omitted all processed breakfast foods like cereals and frozen waffles and pancakes. I think it really hit home when the first ingredient in my kids’ Apple Jacks was sugar! Packing ingredients are listed in order of weight, and that wasn’t the only sugar included in the list, different names, all the same. Plus a host of things I can’t pronounce or cook with myself. I had to go according to my new Food Rules.

Ingredients

  • Whole Wheat Crepes
  • 2 cups whole wheat flour
  • 1 teaspoon premium baking soda (Bob’s Red Mill)
  • 3 large brown eggs (farm fresh if you can get them)
  • 2/3 cup organic whole milk
  • 2 Tablespoons organic coconut oil (also use to brush pan)
  • 2 Tablespoon raw agave nectar (divided)
  • pinch of salt
  • 3 cups of heated water (warm to the touch)
  • 1 cup heavy whipping cream (filling)
  • fresh in season fruit (filling)
  • 1/2 teaspoon vanilla extract

Preparation

  1. Combine eggs, milk, oil, agave, and mix well.
  2. Add dry ingredients to the wet and mix well.
  3. Slowly start to incorporate in the warm water while continuously to mix well. Add enough water until the mixture is consistency of skim milk.
  4. Heat a medium frying pan over medium-low heat. Brush your pan with a small bit of coconut oil.
  5. Once to temp, ladle about 2/3 cups of crepe batter and swirl around pan making a large flat pancake that is very thin.
  6. Flip when the edges are cooked, and only once.
  7. Combine heavy cream, 1 TBS agave and vanilla extract in a mixing bowl and whip until soft peaks.
  8. Fill crepes with fresh fruit and whipped cream, roll and serve.
  9. You can dust with powder sugar, but I think they are sweet enough without and it lets the fruit flavor shine.
