Ingredients

  • 2 cups alborio rice
  • 2 liters Water
  • 4 cubes chicken stock
  • 2 tablespoons lemon juice
  • 1 chicken breast
  • 1 onion
  • 1/4 cup pine nuts
  • Mushrooms
  • Parmesan cheese
  • Spinach (optional)

Preparation

  1. Shave Parmesan cheese.
  2. Toast pine nuts and place to the side.
  3. Cook mushrooms and chicken; tear chicken into bite size pieces and remove from fry pan.
  4. Cook onion until brown.
  5. Add rice and cook for 3 mins.
  6. Add water, chicken stock and lemon juice and stir.
  7. Cook for approx 15 mins with lid on simmer.
  8. Mix in chicken and mushrooms.
  9. Add spinach if desire.
  10. Garnish with pine nuts and cheese.
