• This is a GREAT egg bake recipe that EVERYONE loves! I made it the other night for my husband and one year old... the in-laws happened to walk in just as I was pulling it out of the oven and were in awe of how good it smelled and looked (not to mention tasted once we all had a piece!)
  • I'd say it serves 4-5 adults, depending on what size crust you get.

Ingredients

  • 1 refrigerated pizza crust
  • Chopped veggies (green/yellow/red peppers, zucchini, mushrooms, whatever)
  • Olive/veg. oil
  • 8-10 eggs
  • 1/4 cup milk

Preparation

  1. shredded cheese
  2. Preheat oven to 375. Unroll crust onto a nonstick baking sheet and bake for 7 minutes.
  3. Meanwhile, in a large skillet, saute veggies in 1 tbsp oil (about 5 min). Add salt/pepper to taste. Transfer veggies to a bowl, wipe skillet w/paper towel.
  4. Scramble your eggs (recipe calls for 8 eggs, I like to use more, 10).
  5. Once pizza crust is out, sprinkle eggs over, top with veggie mixture and then however much cheese you want on top.
  6. Bake for 7 to 8 minutes longer. Cut into squares. YUMMMM!
