• This recipe is a very yummy lactation cookie recipe. Even if you aren't breastfeeding it makes the best oatmeal cookies! Just leave out the brewer's yeast! Everyone in my house loves them (even with the brewer's yeast in them).

Ingredients

  • -1 cup butter
  • -1 1/2 cups brown sugar
  • -2 tablespoons flaxseed meal
  • -4 tablespoons water
  • -2 large eggs
  • -1 teaspoon vanilla extract
  • -2 cups flour
  • -1 teaspoon baking soda
  • -1 teaspoon salt
  • -4 tablespoons brewer's yeast
  • -3 cups thick cut oats
  • -1 cup (or more) chocolate chips/raisins

Preparation

  1. Preheat oven to 375F
  2. Mix the flaxseed meal and water in a cup and set aside for 5 minutes.
  3. Cream together the butter and brain sugar until smooth.
  4. Add the eggs, one at a time, and mix well.
  5. Stir in the vanilla and flaxseed meal, and beat until well blended.
  6. Sift together the dry ingredients (except the oats and chocolate chips/raisins). Then add to butter mixture.
  7. Stir in the oats and chocolate chips. Mix well.
  8. Scoop onto a greased cookie sheet. Flatten with fork (think peanut butter cookies).
  9. Bake for 10-12 minutes depending on size of cookie.
