• This Yummy Taco Soup recipe makes for an easy treat that is both tasty and satisfying.

Ingredients

  • 6 Cups Water
  • 3 Chicken bouillon cubes
  • 3 Beef bouillon cubes
  • 1 24 oz. Jar Salsa
  • 1 Package Taco Seasoning Mix
  • 1 Tablespoon Ground Cumin Powder (optional)
  • 1 Tablespoon minced or chopped Garlic
  • 1 Cup Baby Carrots cut up
  • 2 15 ï¿ 1/2 oz. Can Black Beans with liquid
  • 1 15.25 oz Can Corn with liquid
  • 1 lime or 2-3 Tablespoon lime juice
  • Optional: Add cooked ground beef (1 ï¿ 1/2 pounds)

Preparation

  1. Boil 6 cups water
  2. Dissolve chicken and beef bouillon cubes
  3. Add the garlic and stir
  4. Add salsa and stir
  5. Stir in taco mix
  6. Add cumin powder and stir
  7. Turn heat to medium or low
  8. Add cut up baby carrots and stir
  9. Add black beans and stir
  10. Add corn and stir
  11. Squeeze the juice from one lime into the pot.
  12. Cook until all vegetables are warm (about 3 to 5 minutes)
  13. Line the bottom of small soup bowls with broken tortilla chips. Add soup to each bowl and enjoy. Some people like cheese or sour cream on top. Note: use a very very large pot for this..bigger than a Dutch pot.
