• this is a great recipe for a side dish for dinner ... or make a bunch of it for a holiday sidedish. it was my dads and i grew up LOVING it. its nice being able to have a recipe handed down that my family loves as well.

Ingredients

  • 2 lbs of carrots (sliced any way youd like)
  • dry bread crumbs
  • 1/4 c. carrot water (from boiling the carrots)
  • 1/2 c. mayo (more = creamier sauce)
  • 3 tbsp. minced onion
  • pepper and salt to taste
  • 2 tbsp. horseradish (or to taste)

Preparation

  • boil carrots until tender and reserve 1/4 c. of the water. place carrots in pan or casserole dish evenly. mix together the rest of the ingredients minus the bread crumbs to make a "sauce". spread the mixture over hte top of the carrots. place pats of butter evenly over the whole pan (on top of the carrots and mixture). sprinkle bread crumbs over the top of the carrots. bake at 350 degrees for about an hour.
