• This is my kids favorite treat–they eat it for breakfast, with lunch, as a snack and everything in between! Hubby's best friend insists I put crack in it–because he’s completely addicted. The recipe makes two loaves of bread, so you’ll need two loaf pans to make a batch–don’t worry though if your family loves it as much as mine you’ll be amazed how quickly you can go through two loaves of bread!

Ingredients

  • 3 cups flour
  • 3 cups sugar
  • 3 eggs
  • 3 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup chopped nuts (optional)
  • 1 cup vegetable oil
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 2 cups grated zucchini

Preparation

  1. Beat eggs until light and foamy, add oil, sugar, zucchini and vanilla. Mix lightly but well.
  2. In a separate bowl mix flour, soda, baking powder, salt and cinnamon. Then add flour mixture to egg mixture. Blend and add nuts (optional).
  3. Pour into two greased & floured loaf pans and bake at 325* for one hour (or until toothpick comes out clean).
