Ingredients

  • 8 oz uncooked Linguine
  • 4 cups coarsely shredded zucchini (about 3 medium)
  • 4 tsp. Extra Virgin Olive Oil
  • 2 garlic cloves, thinly sliced
  • 1/4 c fat-free plain yogurt
  • 3/4 to 1 cup shredded extra-sharp cheddar cheese
  • 3/4 tsp salt
  • 1/4 tsp pepper

Preparation

  1. Cook Linguine according to package instructions. In a colander, drain the zucchini, squeezing to remove excess liquid. Pat dry.
  2. In a large nonstick skillet, saute the zucchini in oil for 2-4 minutes. Add garlic and saute for 2 minutes or until zucchini is tender. Transfer to a large bowl. Add the yogurt, cheese, salt and pepper. Drain Linguine; add to zucchini mixture and toss to coat.
  3. Yield: 6 side-dish servings
  4. I usually double the recipe and serve it as a main dish...the kids love it and don't realize they are eating veggies! Reheats really well for leftovers.
