Cook Linguine according to package instructions. In a colander, drain the zucchini, squeezing to remove excess liquid. Pat dry.
In a large nonstick skillet, saute the zucchini in oil for 2-4 minutes. Add garlic and saute for 2 minutes or until zucchini is tender. Transfer to a large bowl. Add the yogurt, cheese, salt and pepper. Drain Linguine; add to zucchini mixture and toss to coat.
Yield: 6 side-dish servings
I usually double the recipe and serve it as a main dish...the kids love it and don't realize they are eating veggies! Reheats really well for leftovers.
