Here's the one I think I am going with.... what do you think?

I learned to laugh and squeal, then sit and stand,
and I can walk now if you hold my hand.
But the fun has only just begun,
lookout world, I'm turning one!

The Country music group Alabam has a song called - You'll never be one again.... It is a song about a father talking about his little girl...and how she "will never be one again"

Quoting Gretchen:

Hi Kristen! I found a cute saying that I used on my son's 1st birthday invite, here it is:
One little candle placed on the cake,
One first birthday wish to make!
It's _____'s 1st Birthday!
I got a polka dot candle and tied it with a ribbon that I attached a circle punch cutout to, and put a '1' sticker on the circle. I used glue dots on the candle and put it on the invite. The candle added a bit to the postage, but it came out super cute!

I LOVE this.  How cute and creative!

I found this one and thought that it was cute, not too dorky.

You all waited patiently for my birth,

Now it's been one year since I came to earth!

Please help me celebrate my turning one,

Come to my house for some birthday fun!

There will be lunch and cake and ice cream too.

I really can't wait to see all of you!

Both of these are short and sweet, and good for little girls:

I'm cute and sweet and so much fun,

Look out world, I'm turning 1

A little cake, a lot of fun

A little host who's turning 1

Also, I had a BBQ for my sons 1st Birthday and we used this:

First birthdays are special and barbecues are fun.

Please join us to celebrate as NAME turns one!

I hope this helps.

For my son's birthday I wrote...

Hurray Hurray! It's my big Day!
Time to celebrate in a John Deere way!

Of course you could change the theme to whatever your party theme will be!

I got a cute poem from dmarie.com it's not updated much, it's an older site as far as layouts go, but the quotes are great. lots of page titles and poems.

I'm turning 1...

      Let's have some fun!

We have adorable little girl stamps and paper.  One set has cupcakes, and different things you can add to them.  Another has princess like stamps.  Really sweet and there's paper that coordinates.  My website is below.  You can view the catalog online.  You may get more ideas from it.  I call it an idea book, actually. :)

Good luck!
