A great lunch idea..change up the ordinary grilled cheese. Make a grilled cheese with white cheese..provolone, swiss or mozzerella. Cut into 4 pieces (long ways) and dip in marina sauce!

My all time favorite meal for toddlers= quesadillas. You can make them with just about any meat or veggie with cheese, or just plain cheese. They are easy for little kids to hold and eat. I normally make them with cooked diced chicken, seasoned with taco seasoning, and mixed with corn. We use sharp cheddar cheese. I cut them up in little wedges once they are cooked, and the kids dip them in sour cream, or plain yogurt.

My favorite two night meal:

Put cut up chicken, tomato paste, tomatoes, bell pepper, onion, and seasoning in a crock pot to cook about 4 hours. Serve on toasted whole wheat hamburger buns.

The next night serve the leftovers with whole wheat noodles for a chicken spaghetti.

**You can put pureed or chopped up carrots in this dish for added nutrition

Apple slices with a sprinkle of cinnamon and stevia powder, then microwave to cook the apples...tastes like apple pie filling!

Tasha, really simple, pour your cous cous into a bowl or pan (depending on how much you're making) add boiling water (just enough to cover it) put a lid on it and walk away. takes about 5mins. I add orange or apple juice if I'm making a sweetish dish, or butter if I'm doing it savory. I only put the pan on the heat if I've made it too soggy, so I'm yet to burn it. :)

I know what you mean, frozen grapes are a great summer snack, my daughter will eat anything with marinara sauce & loves eggplant parmagania. I just peel & slice the eggplant, layer it w/moz cheese & jarred sauce & bake. I also just made the best meatloaf ever, used stove top to season the mixture, egg & V8

[deleted account]

Corrine- I've never been brave enough to try cous cous. Is it simple to make? I've always been affraid I would burn it lol!

Cous cous! Little bit of mixed spice (nutmeg, cinnamon, ginger, coriander seed) butter, hot water. let it do it's thing while you chop leftover chicken, apricots, handful of raisins (whatever you have)- bosh, dinner done.

Grapes are also good dipped in PB.

Chop up cooked broccoli and ham to around pea size. Mix it with cheddar cheese sauce (I use Frito lay brand) Unroll refrigerated croissant dough, separate, and set half aside. Pile on the mixture on the first half leaving a little room around the edges. Put the other croissants on top and seal around the edges and bake. Cook for time and temp that rolls normally take. If its not quite brown enough just let it cook a little longer. It's like a tasty hot pocket.

A great afternoon snack is peeled baby carrots dipped in peanut butter! YUM! Another favorite snack in our house is frozen go-gurts or nutella spread on a graham cracker! ;)

Check out www.cookstr.com. I use this site a lot. You can put it a skill lever, price range, and time that you want to spend. My son loves hummus, he doesn't really eat meat so it is a great source of fiber and protein.

Oh she loves smoothies. You can find them in the frozen isle. You just mix fat free milk and the smoothie mix in the blinder, they are awesome snacks.

I also give her jello snacks

blueberries? sounds good. I've always wanted to try the mango salsas too.. or pineapple.... mmmmmm when I'm done being pregnant I'll have to find more energy to do that lol

[deleted account]

My favorite burrito:

1 cup of brown rice
1 cup of black beans (or can if you don't use dry beans)
1 cut up chicken breast
taco seasoning (cumin, chili powder, garlic powder)

Mix it all together and roll it in a tortilla. You can add sour cream, lettuce, cheese, tomato, guacamole...whatever you like.

[deleted account]

My favorite salsa!
1 cup of blueberries
1 med red onion
1 jalepeno
1 red bell pepper
1 tbs cilantro
1-2 tbs lime or lemon juice

Put it all in a food processor. Serve with chips. If you don't like spice, cut out the seeds and veins from the jalepeno and bell pepper.

Breakfast
- eggs...sometimes like a sandwich on whole wheat toast, sometimes rolled in a tortilla
-waffles...i make a huge batch with whole wheat... some with blueberries, some with strawberries, some with chocolate chips...and freeze the leftovers for quick breakfasts on busy mornings...if you put something in them you don't need sticky syrup!
-smoothies...put yogurt and whatever fruits and veggies you have in a blender and enjoy

Lunch
-chicken nuggets - cut up chicken breast, give the pieces an egg bath, roll around in bread crumbs mixed with parmesan, put in oven until done...freeze leftovers!
-mac-n-cheese...mix in some broccoli!
-quesadillas

Snacks - FRUIT!
Make a smoothie, put it in popsicle molds for yummy nutritious popsicles!

A favorite of mine is banana walnut pancakes - so easy to grab out of the fridge, can make them really small for kids too. Can stick any kind of fruit in them too - berries and well if your really feeling fat, chocolate chips (with a layer of peanut butter) thanks Uncle Nick for teaching me that one lol
Mini pizzas- you could use english muffins or pitas. My moom is a huge fan of the pitas lately, layer sauce on, cheese, throw on peperoni and its done after 15 minutes in the oven......

My son loves fruit, so that's a huge thing in our house.

Christian loves pizza, so we make mini pizzas. I get a roll of biscuit dough, pizza sauce, low fat-real cheese, and turkey pepperoni. It's quick and he loves to help make them.

Another thing that I do on occasion is get Mini Nilla Waffers and make lowfat pudding or buy the Jello ones. He loves to dip the waffers into the pudding, and it's only about 100 calories; so I don't feel guilty eating it with him.

Ohhh....and apple slices with a tiny bit of peanut butter on them. Yum :)

lol! I hope to get to the store early this week, so I'll look for it. I like hot, but I like flavor too. I'm always trying to make things hotter. Ever since my first pregnancy I crave flavor all the time, really sucked when I got pregnant with my 3rd and could eat anything but begals and cream cheese!

sometimes its hard to find but the hot sauce I prefer is called Mexi-Pep and it's more flavorful than hot - swear. It's actually sweet? It's usually about a dollar too and found in the 'mexican' section.. like other people dont eat it?!

[deleted account]

HAHAHA! I love all sorts of food, and I'll hve to try these. Leave the hot sauce off my kids, but sounds good for me

I couldn't do that lol

tomato slices, with garlic salt and lemon pepper

cucumbers sliced with 1 tiny drop of hot sauce, 1 tiny drop of lemon juice and some salt - they are wonderful

a little hot sauce on cream cheese, with tortilla chips

meat cheese and crackers - variations of everything inbetween with cream cheese and peperoni and crackers or ham chedder and crackers or peperoni and swiss

my moms favorite is to get that Buddings thin sliced meat, pastrami flavor, and take chunks of cream cheese to wrap the pastrami around so you end up with little folded meat cream cheese cubes you can pop in your mouth

I'd also try some wraps - tortillas, cream cheese, lettuce, tomatos, avacado- whatever you want really, spread it on, roll it up and slice it for mini foods

A sure fire hit for a snack for all in our house is so simple - just a plate of cubes of apple and cheese... Eat one by one, or pop a cube of each into your mouth at once - really yummy. And a bonus for those old enough to be trusted with a cocktail stick, you can stab the bits too!
