My 2 yr old Granddaughter repeats the last word I say. If I ask her "Do you want a snack?" she says "Snack". If I say, "Let's eat poo poo,", yep... she says "Poo poo." She lives with me 6 days a week, 24 hrs a day. I never had this with her mom nor with her uncle so I am out of my element on this. Any suggestions would be great.

I think she's probably just mimicking your words. It's pretty common. She's just starting to speak and expand her vocabulary :)

Kimberly Clark, at what age should I begin to really worry about that? I just looked up Echolalia which is a form of autism. That really scares me.

Research Echolalia. She may develop through/past this stage; or it could be a beginning sign of what's ahead.
