Any advice on dairy/soy elimination?

My breast-fed baby girl is one month old, she's been having tons of gas (like man farts!), she cries (sometimes screams like she's being cut with a knife) usually after every nursing & sometimes pulls off the breast wiggling like she's super frustrated, wheezes with congestion while sleeping, is super squirmy while sleeping (usually wakes herself up), and has mucous filled stools (either orange-yellow in color or sometimes green). So I've gone the total elimination diet eating only turkey, chicken, yams, potatoes, rice, rice milk, rice chex, Rice Krispies, avocados, bananas, and pears. It will be two weeks tomorrow that I've been on the diet and so far I haven't noticed any change in my baby girl. :( Some days she seems to be napping a little better, but nothing ever consistent. I've been thinking it's a dairy intolerance (and possibly soy) because I couldn't handle dairy as an infant. Could it take longer than two weeks on the diet to see some relief in her symptoms? Sometimes I read it can take two days to see improvement from cutting dairy, other times I've read 5 weeks. Therefore I'm super confused as to how long I should give the diet time to see if it's helping. My heart is breaking to see her in all this anguish. Thanks in advance for any info/advice! :)
