fruits and veggies

I started a bad habit with my 19 month old, he loves chicken nuggets, chips, crackers etc. Only time I get veggie in him is dinner when I can mix it in like mashed potatoes. But to much of all this breaded foods and potatoes constipates him. I am out of meals to mix veggies in any ideas? Fruits forget it, watermelon is the only fruit he will eat from a plate and its not watermelon season, he likes yogurt so I do give him lots of that for the fruit. Any good ides? Do I need to just be harsh and only put fruits and veggies on his plate and he will eventually eat...

Veggi nuggets:) you could also try making a veggi soup,just cook some veggies in stock and when their cooked blend it i put a dash of cream in the soup but you dont have to.I always make some fresh croutons and put them onto the soup,so my son eats the soup because of the croutons. Or try filling zuchettis with mince in the oven. You can also fill tomatos. Good luck

Thanks for the response, I have done the mashed cauliflower which is good, the spaghetti squash no I shall try. As for the veggies and dip he may enjoy doing that by himself. Its just a matter of getting him to pick up the veggie and actually try it. He is a " do it himself " kid if I try to feed him something NEW he wants nothing to do with It.

Any other kid loves Mac n cheese, pb&j, spaghetti you known kid meals well that's not my case here he doesn't like any of that so its challenging that's for sure.

Do you think he would eat veggies with dip? I am so lucky, and none of my kids are picky eaters. They will eat any fruit or veggie I give them. In fact, my 2 year old sons fav veggie is broccoli lol But I do know from my sisters kids, who I watch during the day, that they will eat carrot sticks and such with dip because they think it is fun. If your son can't eat raw veggies yet, you can steam them for a little bit and they will get softer, and he can still pick them up and eat them.

If he likes spaghetti, you could try making spaghetti squash. It looks just like normal spaghetti, and tastes very similar, but it is a vegetable. Also, my kids love mashed cauliflower. It looks like mashed potatoes. And you can even look up mashed cauliflower casserole, it has some cheese in it too which makes it taste just like mashed potatoes. Hope this helped a little :)
