I know that most of the nutrients are in the skin of fruits and veggies- so is it better to leave skin on?

Of course some skin is bound to be removed like pumpkins and carrots for babies. But the safe ones like pears, apple, grapes, squash, egg plant, etc.. if properly cleaned- is it better to keep?

It depends on the type of fruit or veggie, and the age of the child. Some skins are so bitter that most people cannot stand the taste. Some skins can pose a choking hazard for children who are very young. Use your best judgment to decide whether to take the skin off or not.
