Just a variety of healthy options offered for regular meals and snacks. Fruits and veggies in addition to the starches and proteins that you mention. You be in charge of the foods that are offered (including at least one healthy item that you know she likes) and let her be in charged of when and how much she eats.

My girls are teenagers now and when they were toddlers their best friend would literally lick the syrup off a waffle and be done w/ breakfast. She is still a pretty picky eater, but she is a happy, healthy, and thriving teenager.
