How fussy is really fussy? I find for like vegetables putting them out before the regular meal can help get them eating them.
I would try to get them to eat something that is similar to other things they like, or can somehow be incorporated.
Like my son really loves macaroni and cheese, so I would throw peas in with his macaroni and cheese. That's how it was made, and he liked it.
If he REALLY refuses to eat any sort of vegetable etc. you might try to entice him by saying if he eats one bite of whatever he gets to have more of this good thing he likes (some food he really loves like hot dogs or french fries...). Then he gets to decide if he wants it or not.
Try to introduce new foods slowly and ask him to have at least one bite of it. I always told my son how great he was a trying new foods, even if he decided he didn't like it.
