My kids like to play a modified version of the board game would you rather. You ask two scenarios and then they pick the lesser if two evils for them. My 3 year old will even play this. For example would you rather eat worm for dinner or flies? Would you rather give up tv for a week or the computer?

Thanks for the great suggestions, everyone! We have a 20 Questions game that we play, but that does get old after awhile. The license plates games aren't great for this trip cuz it's a 2-lane road for a lot of it, but the "Would you rather" sounds really fun. As does pass it on stories.

a bingo game that's played with pictures (tree, dog, moving truck, traffic light, speed limit sign, airplane, bird etc)
pass it on stories (each person adds a line or 2)
journaling about what they've seen if you're between places or on the way home
I keep a small bag of stuff to hand them that gets rotated every 1-2 hours...different puzzle book, book, small toys, small snack, etc
Bookstores usually have fun travel games/activities - we got a magnetic Tangram book for each of them last year before a trip.
