NONE of these prenatal scans, ultrasounds, etc are 100% accurate, and one should not plan their entire baby shopping experience around one technician telling you you're having one or the other.
I don't know why the techs started saying "you're having a Boy" or girl, as the case may be. When I was pregnant, my techs said that due to liability issues, they would not tell me what sex they thought they saw. They would give me a picture and I could make my own determination.
And, to be honest, that makes a whole heck of a lot more sense than some tech telling you they're "sure" you're having one or the other.
