How to help my teenager not be afraid to try new foods?

Unfortunately, this is really something that, in my experience, needs to be started at a much younger age. My children are really great at always trying new things. From quite young, I always told them that they didn't have to eat everything on their plate, but they weren't allowed to tell me they didn't like it unless they tried it.....more than once. It takes 16 times before children acquire a taste for a food (at least, I think that is the number), so allowing them to just spit things out and then never giving them another go when they are young is really setting up for a difficult time as they get older.
Now, my children (oldest is nowt 21) will try things. I never lie to them about what it is. They will give it a go with open minds. Sometimes they surprise themselves.
I'm not sure how you go about it with an older child. This is something I instilled in mine at a very young age, so it has always been something they have done.
