My kids tend to be on the loud side as well. My son loves to pretend he's a dinosaur or monster (with all the accompanying sound effects of course) and this generally sets of his younger sister, who likes to screech in terror (usually faked) or anger.
What I found helps is just constant reminders.
When my kids get loud, I have them come over to me and take a few deep, calming breaths with me. Then I ask them to show me their indoor voice (a nice quiet, just above a whisper type of voice and we say *inside voice, quiet*). Then I tell them that they need to calm down a bit.
If they can't calm down and keep screaming, I will have them come and sit right beside me for a few minutes. They need to sit generally still (not jumping around/major fidgeting, nice and calm) and when they seem calm for a few minutes, I get them and we go over the *indoor voice* thing again.
I've been doing the breathing thing with my son since he was about 18months (he was a bit of a late talker) and the *inside voice* with both my kids since they could talk.
They're still loud at times (at 4 yrs and 2.5 yrs), but it has helped a lot. It also helps to give them an outlet where they can be loud at times during the day for a little while :)
