We have to do the same for my daughters class each child has to bring either a fruit or a vegetable for snack time and then the helper mom brings the cheese and crackers. We tend to take grapes, watermelon or apples as these are my daughters favorites.

My 3 year old love "ants on a log." They are celery sticks, spread peanut butter (or cheese spread) along the inside, and put some raisins on the top. Or what about making some mini banana chocolate chip muffins? Fruit? Cucumber slices?
