No matter what brand, you need to be aware that cheese is one of the things that causes severe constipation in little ones.
Only non processed cheese (no velveeta, or canned cheeses, for example)
Mozzarella is a good mild taste, as is swiss. My kids liked string cheese, which is usually swiss, but more fun to eat.

I don't think the brand really matters. I would offer real cheese (not processed cheese) and full fat cheese (not low or reduced fat). We've never bought special cheese for our kids when they started eating it. They just ate what was in the fridge. You could try cheddar, jack, mozzarella, gouda, havarti, provolone...
