Thoroughly tired of my tomato based beef stew with veggies like carrots, cabbage, onions, mushroom etc. Any new ideas on how to spiff up this super convenient but old week night staple?

I cut it up into 2" chunks. But if I'm pressed with time, I cut it into 1" or even .5" strips. They cook pretty fast and goes with pretty much anything!

I use napa cabbage a lot, it's not as strong as regular green cabbage. A stew is good with rice, noodles, bread, or on its own! We have it so often in our house!

This recipe does pretty well for that. i am sure the potatoes will get a bit mushy, but I have even frozen it.

Both my kids (age 3 and 7) eat it up. I also make some Jasmine rice separately, my husband like to add it to the stew. I am sure you can use any rice you like.

I actually just made one tonight. I do use broth, and soup. Here it is.

1 lb of stew meat (or more...whatever)
1 can beef broth
1 can mushroom soup
baby carrots cut up
corn drained (not a whole can, usually i get a half can size and use half of that)
1 sm yellow onion
celery 1 stalk if you want it
potatoes whatever kind you want...
2 garlic cloves whole (if you want you don't NEED it but garlic is so good for you)

You can brown the meat first, or if you are using a crock pot put it straight in
I mix the beef broth and soup mix well, then start adding the veggies. Also with one of your empty cans, (broth one bigger) use 1 can of water.

Season with little salt, pepper, (I like a mix of garlic salt and parsley but you don't really need it if you don't want) I like to throw a bit of oregano or any other spice into it.

Cook till done. I throw whatever I have in it, and supposedly it comes out great. Family raves about it. I don't eat meat, so I have no idea.

I will have to try that cabbage. Any extra veggies in my kids bellies makes me happy. Do you cut it up small or leave it big chunks?

You can still add cabbage to this recipe. Husband doesn't really like it so I just don't add it. Sometimes I put green beans in it, peas, just really whatever. It is a versatile base.

Hello Little Miss Can't Be Wrong,

Thank you so much for the recipe! Corn is a really good idea especially when we're entering summer season, there's a ton of corn in CA. I've always wanted to try other kinds of veggies but can only use ones that can withstand reheating a bunch of times.
