My son is just like him.. What i do is juicing. I put carrots, celery, apples, and pears. He gets his vegetables right in and it is sweet enough that he likes drinking it, and it is 100% natural. Also, you can give him Pediasure (drink) it has a bunch of protein and vitamins to keep him afloat.

Almonds, soy milk, legumes, eggs, cottage cheese, peanut butter, quinoa, beans, chickpeas, sesame seeds, sunflower seeds, poppy seeds, pumpkin seeds...
Do a search on non meat sources of protein. There's a plethora of options!
