My 2 year old son went from eating from all food groups to barely eating eating anything. He refuses meat and vegetables and only prefers carbs, i.e. pasta meals or potatoes. He was recently diagnosed to food allergies to eggs and peanuts. He has a more restrictive diet now but do I get him to eat more of a variety of foods?

Great idea! With his allergies I have to start doing even more cooking from scratch and I actually just bought some quinoa to try for the first time myself. Hopefully we both will like it.

No problem. If that doesn't work, you could try hiding veggies in different things. My favorite thing to make is banana and carrot muffins. Toddlers are picky, research says it take 30 times for child to see a new food in order to try it.
Quinoa and beans are a great way to get protein in your kiddos. My kids LOVE cheese and yogurts.

Place a small amount of healthy foods on an ice cub tray. 2 year olds want to do things on their own. Don't force the food on him, but just keep reintroducing food items to him. I am a parent coach and an educational advocate. Sriparentcoach .com
Let me know if you need any more help. I have a 2 year old and a 4 year old... I completely understand your struggles.
