we aren't vegatrian but we all love this meal, it does have a little bit of stove top prep but that can be done the day before if need be....



curry vegi stew with herb and cheese dumplings



brown off some onion carrot celery with garlic on the stove top, then add some cubed root vegies, (potato, parsnip, swede, pumpkin, what ever you like but a starchy type veg), and a few spoons of your fave curry paste or powder, cook about 5 mins then transfere to slow cooker add vegi stock (or water or water and stock powder what ever you have) some presoaked or tinned chick peas, your fav lentils, cook until all vegies are tender and lentils are almost disolved, about 4hr high or 8 hrs low,then top with dumplings and cook high for about 30 mins



dumplings...

2cup sr flour

about 1/2 cup fresh chopped herbs

about 1/2 cup parasan cheese

salt

25g melted butter

1 cup milk

mix together (donot over mix) add spoonfuls to slowcooker

Vegetable-Barley Medley Prep: 20 min

cook time:low 7 hours, High 3-4 hours

Slow cooker 3 1/2-5 quart

Servings: 4



1 15 oz can black beans, rinse drained

1 14 oz can vegetable broth

1 10 oz package frozen kernel corn

1 large onion, chopped

1/2 cup regular barley

1 medium green sweet pepper, chopped (3/4 cup)

1 medium carrot, thinly sliced (1/2 cup)

2 cloves garlic, minced

2 tablespoons snipped fresh parsley

1 teaspoon dried basil or oregano, crushed

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 medium zucchini, halved lengthwise and thinly sliced (1 1/4 cups)

2 medium tomatoes, coarsely chopped (1 1/2 cups)

1 tablespoon lemon juice



1. In slow cooker, combine drained beans, broth, corn, onion, barley, sweet pepper, carrot, garlic, parsley, basil or oregano, salt and black pepper.



2. Cover and cook on low setting for 7-8 hours or on high for 3 1/2 to 4 hours.



3. If using low setting, turn to high heat. Stir in zucchini, tomatoes, and lemon juice. Cover and cook 30 minutes more on high.
