potty training my daugther and she wont get off the potty!! HELP PLEASE!

I recently started to familiarize my 21 month old daughter with the potty. I originally wanted to potty train during her December break from preschool as I would have a couple of weeks to do it without any obligations for her. however, she started to show so much interest when I was on the potty...she would say "mommy pee pee" and hand me toilet paper, tell us when she peed or pooped in her diaper, and wanted to go on my nieces potty. one day after seeing my niece do poopy on the potty she was almost in tears as she pooped in her diaper and pointed to the toilet and didn't see a potty seat...so of course I ran to the store and got her an elmo potty seat...since then she LOVES the potty. she hasn't pooped on it yet which I am not expected for a while...but she pees often and tells us when she has to go. I still have her in diapers and she still goes in them...I am planning on going cold turkey the beginning of November after a family vacation. THIS IS MY ISSUE: everytime she sits on the potty she goes which is great and as soon as you take her off she wants to go back on...AND SHE PEES AGAIN! she will pee multiple times in one sitting and if you try to take her off she screams. even when she gets off herself....two minutes later she wants to go on again...AND GOES. is this normal for a child to pee multiple times in one potty sitting?
I don't want to discourage her but she will sit in there for 30 minutes if you let her. i know she doesn't have an infection as she is on antibiotics for a cold and believe it or not the doctor did a urine test (try having your 21 month old pee in a cup! definitely interesting) so i know medically she is fine.

PLEASE HELP!!

Thank you Michelle :) I just say what works for me to maybe ease a situation for someone else. But all kids are different and you never know what will work for them until you try just about everything our creative minds can come up with :)

thanks for your response! I don't use a potty chair I have a potty seat cover for the toilet. i have a dog who is very hyper and gets into everything so i didn't think it would be a good idea...its so odd how she just keeps going and stopping and going...and i read some posts that kids like to play on there etc but she doesn't...no toys...not even the toilet paper just sits and keeps peeing and stopping and going again. i fear im pushing her to finish so fast...im chalking it up to an immature bladder that she just keeps going..but i know im going to have to give her a time limit somehow...your idea is definitely a new one i haven't heard and very interesting maybe ill try it! thanks

So is there any reason why you can't move her potty chair to a room that you are in the most and just let her sit on the potty until she's done? I used to put my potty chairs in the living room which helped my twins get used to the potty a lot easier and then they could stay on there for as long as she wants because you can still get your stuff done. Now I just want to say that I am major clean freak, seeking counseling for it, and I still put their potty chairs in the living room. If she gets carried away for a long period of time I would set a timer and have a it be a game of how fast can she go potty and try to have her beat her last time she went and give a reward for going fast on the potty.
