I spend a lot of time researching and cooking vegetarian dishes for my fussy child. Finding kid friendly vegetarian foods rich in iron is hard enough, but when your child is fussy, its almost enough to send ya barmy!
Thought I would share what I have discovered ...and hopefully through this blog I will learn some more.
I was surprised to learn 'dried apricots' are rich in iron..and the organic (sulphate free) ones are even better - because they are dark and my son is convinced they are 'lollies'. Chopped and mixed with condensed milk an coconut is a winner.
Pine nuts are also a good iron source - easy to throw them into pasta.
