My families current favorite!
It takes a while to cook, but the prep time is super quick.

Chicken fajita casserole:
cut up an onion, and a green pepper into bite sized pieces, put into the bottom of a glass baking dish.
coat chicken fillets (enough chicken to do one layer of chicken across the baking dish) in taco spice.
set them on top of the veggies. Pour salsa evenly over the chicken so it is completely covered.
Bake in the oven for about 45 minutes (or until chicken is cooked) in the oven at about 400 degrees. Take the casserole out, cover in a layer of cheese and broil until bubbly and starting to brown.

Serve with sour cream and bean paste. Love this meal so much.

I always cook a big pot full of bolognese on monday and freeze the rest for another day. When i use the rest i make a bechamel white sauce,cook noodles and mix it with the noodles and i add cheese. Then i put it in the oven till cheese on top is melted..super easy and tastes real good. So next time you make a bolognese,cook the double amount and freeze. You can even just make a bechamel white sauce and make a lasagne with the bolognese sauce. Or fill cannaloni pasta with it,white sauce over it,cheese on top and in the oven.
Another real simple meal that doesnt take alot of time is Toast Hawaii. All you need is toast slices,ham,pineapple rings from a tin and cheese. I live in Switzerland so we are lucky to use raclette cheese..but it works with cheddar,gouda or any kind if cheese. Put the toast slices on a oven tray. Then put ham on every slice,then a pineapple ring and then cheese on top. Put in oven and when the cheese is melted its ready. We eat it with a salad.
Another dinner i like to make and is easy because you let the oven do the cooking is chicken! I put chicken legs into a tray,spice them with chicken spice. I cut an onion into quarters and put it in the tray. Add some fresh garlic pieces with the skin on so the garlic doesnt burn. Then i cut an orange into quarters,squeeze abit of the juice on the chicken and then also just place it with the chicken and put it in the oven for about 1hour. You can also make potato wedges at the same time in the oven. Or serve with mashed potatos.

If you like you could make a week list of dinner. Write down what you are going to cook for a week. That way you can also see what all you could buy at once. And if you need a good bolognese recipe let me know,i will share mine. Btw Rösti served with a fried egg and sausage is also easy. Its typical swiss to eat Rösti with fried eggs. I could tell you how to make a good rösti..its so simple,you only need potatos and some butter for frying.

@Gena W - We generally just do medium salsa, because it comes in big jugs (and we love our salsa).

Trisha,that sounds delicious! I think i am going to try it. Is the salsa spicy? We only get old el paso spice and salsa..hope it will work with that!
